Chicken with Plum Sauce and Cream Cheese

To prepare a delicious meal, we start by marinating the chicken. The first step is to take care of the onion and garlic. The onion is finely chopped, patiently, to release its flavors. The garlic is crushed, releasing its essential oils, which will enhance the chicken's taste. These two ingredients are combined in a large bowl, where we also add other spices, such as salt, pepper, olive oil, and, if desired, a bit of rosemary or thyme for a touch of freshness. Once we have mixed the ingredients well, the chicken cut into suitable pieces is added to the resulting marinade. It is important that the chicken is well covered in the sauce so that the flavors penetrate the meat. This mixture is left in the refrigerator for about 4 hours, but if you have time, leave it even overnight for an even more intense flavor. Meanwhile, we take care of the plum sauce. Ripe plums are cut into quarters, allowing them to retain their juice. In a saucepan, the sugar is dissolved in wine, choosing a quality wine that will add a note of sophistication to the sauce. Once dissolved, the cut plums are added. They are left on the heat for about 5 minutes until they start to soften. At this point, the paprika is added, which will provide a vibrant color and a slightly smoky taste. Everything is left to simmer for 10 minutes, stirring occasionally to avoid burning. In the end, the sauce should be thick and flavorful, perfect to accompany the chicken. While the sauce is cooking, we focus on the cheese cream. In a pan, a tablespoon of oil is added, where the finely chopped garlic is sautéed. The aroma of the sautéed garlic will add a savory note to the cream. Once the garlic turns golden, it is transferred to a blender along with the cottage cheese, soft butter, lemon juice, and salt. These ingredients are blended well until a smooth and creamy paste is obtained. Finally, finely chopped green onion is added, which will provide a contrast of textures and an added freshness. After the 4 hours of marinating, the oven is preheated to 250 degrees Celsius. The chicken is removed from the marinade and placed in a greased baking tray, ready to be baked. It is left in the oven for 30 minutes until it becomes golden and crispy on the outside, and the juices penetrate the meat, turning each bite into a true delight. In the end, the chicken is served alongside the plum sauce and cheese cream, creating a perfect harmony of flavors and textures.
