Chicken on the bottle

We start by preparing the chicken, choosing a quality bird that will provide us with juicy and flavorful meat. We clean and wash the chicken with cold water, ensuring that we remove any impurities. Once cleaned, we let it drain on a rack to eliminate excess water. It is essential to season the chicken well, both inside and out, with Fuchs' spice mix, which will add a special flavor to our dish. After seasoning, we place it in a covered dish and let it marinate in the fridge for 3-4 hours. This marinating stage is crucial as it allows the spices to penetrate the meat, providing an intense aroma and rich taste. Once the chicken has marinated, we prepare for the next step. We fill a bottle with water (a plastic bottle is ideal) and carefully insert it inside the seasoned chicken. This technique will allow steam to penetrate the meat during cooking, resulting in tender and juicy chicken. We place the chicken with the bottle in the center of a deep baking tray, into which we have previously added white wine, crushed garlic, and a bay leaf. These ingredients will create a flavorful sauce that will envelop the chicken during cooking. We preheat the oven to a medium temperature, then introduce the tray with the seasoned chicken. We bake the chicken for about 2 hours, making sure to check the liquid level in the tray from time to time. If we notice that the wine and water are reducing too much, we add a little more wine or water, so that the dish does not dry out. It is also recommended to take the chicken out of the oven at regular intervals to baste it with the juices from the tray, ensuring it remains juicy. Once the chicken is ready, we let it cool for a few minutes before removing it from the bottle. The final result will be a tender, aromatic, and flavorful chicken, perfect to be served alongside various side dishes such as roasted potatoes, rice, or sautéed vegetables. A fresh salad will also perfectly complement this dish. Enjoy your meal!
