Sausages in puff pastry

When I need something quick for guests or for a more filling snack, I often turn to sausages in puff pastry. I usually have a pack of puff pastry in the freezer and some leftover cheese in the fridge, so this recipe is really handy. Everything comes together in a quarter of an hour, after which the oven takes care of the rest. The puff pastry must be completely thawed before you start. Roll out one sheet on a lightly floured surface. 2. Cut the sheet into 6 rectangles as evenly as possible. I do the same with the other sheet if I use all the sausages. 3. Grate the cheese on the large grater. Place a strip of cheese in the middle of each puff pastry rectangle. 4. Using a knife, make cuts along the sides of each rectangle, lengthwise, into strips about 1 cm wide, without cutting all the way through. The strips should remain attached on the side with the cheese. 5. Place a sausage over the cheese in the center of each piece. 6. Start to "braid" the side strips over the sausages, alternating from one side and then the other, to lightly cover the sausage with pastry. It doesn't have to be a perfect braid, just somewhat covered. 7. Beat the egg yolk and brush each "packet" with a pastry brush. 8. Sprinkle a little more grated smoked cheese over each one. 9. Transfer the packets to a baking tray lined with parchment paper. Place in the preheated oven at 200°C. 10. Bake for about 25-30 minutes, until the pastry is nicely browned. After 20 minutes, check how they look. 11. Serve warm, but they are also good cold. Tips and variations Tips - I work quickly with the pastry so it doesn’t get too soft. - If I want crispier packets, I use a preheated tray. - The smoked cheese adds flavor, but plain cheese can also be used. Substitutions - Instead of smoked cheese, hard mozzarella or aged cheese can work. - The sausages can be replaced with another type of thin sausage, but the baking time may vary slightly. Variations - For more flavor, I add a little mustard or ketchup under the cheese, directly on the pastry. - I can use seeds (sesame, poppy) sprinkled on top after brushing with egg yolk. - If needed, I make the packets smaller or larger, cutting the sheet according to the size of the sausages. Ideally, classic sausages that are not too thick. Larger ones do not bake as well, and thinner ones may dry out. Nutritional values Estimate for one piece: approximately 230 kcal, with 12 g fat, 19 g carbohydrates, 10 g protein. Values vary depending on the type of sausages, cheese, or dough used. Sausages and smoked cheese are sources of salt and fat, so I do not recommend overdoing the portions. Storage and reheating Sausages in puff pastry are best fresh. If leftovers remain, I keep them in the fridge, covered, for up to 24 hours. They can be reheated for a few minutes in the oven or air fryer. I do not recommend reheating in the microwave – the pastry becomes soft. After the first day, the pastry is no longer as crispy.
