Marinade for Veal

Lean veal is renowned for its delicate texture and fine taste, and the method of wrapping it with bacon only amplifies these traits, adding a touch of flavor and an appetizing appearance. We start by preparing the meat, choosing a high-quality piece of veal that is well cleaned of membranes and sinews. Make sure the bacon you use is fresh and has a balanced meat-to-fat content, as this will contribute to the juiciness of the dish. To wrap the meat, cut the bacon into thin strips long enough to be wrapped around the pieces of veal. Using a sharp knife, make small incisions in the meat where you will insert the strips of bacon. This process will allow the fat to melt during cooking, infusing the meat with rich flavors and a perfect taste. Once you have wrapped all the meat, carefully place it in a tall dish that allows for even marinating. The next step is to prepare a flavorful marinade. In a pot, bring the vinegar to a boil, then add the white wine, which will add acidity and help tenderize the meat. Season the marinade with salt, pepper, bay leaves, and a few allspice berries, which will provide an extra layer of flavor. Pour the hot marinade directly over the veal, ensuring it is completely covered. Cover the dish with a lid or plastic wrap and let it cool to room temperature. Once it has reached a lower temperature, transfer it to the refrigerator, where it will sit for 3-4 days. This marinating process is essential, as it allows the flavors to penetrate the meat, making it much more tasty and tender. Every day, you can turn the meat in the marinade so that all parts benefit from the intense flavors. At the end of the marinating period, the meat will be ready for cooking, having a rich taste and perfect texture. You can choose to cook it in the oven, on the grill, or in a pan, and the result will surely be impressive, turning every meal into an unforgettable culinary experience, full of flavor and elegance.
