Pork rib soup with homemade noodles

To prepare a delicious and nutritious soup, we start by thoroughly washing the bones, ensuring they are clean and free of impurities. Once the bones are ready, we place them in a large pot, preferably stainless steel or ceramic, and cover them with about 3 liters of cold water. We add a pinch of salt, which will help extract the flavors from the bones during boiling. It is essential to bring the water to a boil, and during this process, the foam that forms on the surface should be removed with a skimmer to achieve a clear and appetizing soup. After about 30 minutes of boiling, when the bones have started to release their flavor into the water, it is time to add the frozen vegetables. These usually include a mix of carrots, parsley, and bell peppers, but we can adapt the recipe to our preferences. We also add the onion, chopped finely, and the fresh carrot, diced. These vegetables will not only enrich the flavor of the soup but also its texture. Next, we let the soup simmer on low heat, stirring occasionally, until the vegetables become soft. This process can take between 15 and 20 minutes, depending on the type of vegetables used. After the vegetables are cooked, we add the tomatoes, whether fresh or canned, diced, which will add acidity and flavor to the soup. Separately, in a small pot, we bring the borscht to a boil. Once the borscht is boiling, we carefully pour it into the pot with the soup, stirring well to integrate all the flavors. It is important to taste the soup and adjust the salt level according to preferences, ensuring that each bowl of soup will be an explosion of flavors. When the soup is almost ready, in the last 4-5 minutes of cooking, we add the noodles. This will add substance and turn the soup into a main dish. Finally, before turning off the heat, we sprinkle finely chopped greens, usually parsley or dill, which will provide a fresh aroma and vibrant color to our soup. After everything is well mixed, we let the soup rest for a few minutes before serving. Enjoy your meal!
