Chicken and Vegetable Mix, prepared in Beer

We start this delicious recipe by heating the oil in a thicker pot, ideally cast iron, due to its properties of evenly distributing heat. When the oil reaches the optimal temperature, we add the pieces of chicken, which we will fry all around until they become golden and the pores close, sealing in the natural juices of the meat. This is the essential step to achieve a juicy texture and intense flavor. Once the meat has taken on a beautiful color, we remove it from the pot and set it aside. In the same fat, we take advantage of the flavors left by the meat to sauté the finely chopped onion. Here, it is important to stir frequently to prevent the onion from burning, until it becomes soft and translucent. After the onion is ready, we have two delicious options to continue the preparation. The first option is to put the fried meat back into the pot, seasoning it with salt and pepper to taste. We add the mix of fresh vegetables, diced potatoes, and, if desired, the chopped garlic. We cover everything with beer, allowing the liquid to reach halfway up the meat. The pot will be left on a very low heat, covered with a lid, to allow the meat to cook slowly. After about 30 minutes, we remove the lid and continue to simmer until the meat becomes very tender, almost falling off the bone, and the sauce reduces and becomes more concentrated. The second option involves using a baking dish. After the onion has been sautéed, we pour this mixture along with the fat into a baking dish. We place the fried pieces of meat on top, season with salt and pepper, and add the mix of vegetables and the diced potatoes among them. The garlic, if preferred, can be crushed and added. We cover everything with beer and place the dish in the preheated oven, letting it bake for 1 to 1½ hours, until the meat becomes extremely tender and the sauce reduces. In both options, at the end, we add finely chopped green parsley for an extra touch of freshness and flavor. It is important to taste and adjust the salt and pepper according to our personal preferences. We serve this dish warm, alongside our favorite side, which can include mashed potatoes or a fresh salad, and for an extra burst of flavor, some pickles. This recipe will not only delight the taste buds but also bring the warmth and comfort typical of family meals.
