Fusilli with mushrooms and cherry tomatoes

Fusilli with mushrooms and cherry tomatoes are tossed in a thick sauce, and the pasta cooks in 10 minutes. The mushrooms and tomatoes stay visible in the sauce, which thickens just enough to coat the spirals; serve them warm, and they’re good cold in summer too. I like them cold for lunch, like a simple pasta salad. Prep: 15 minutes. Cook: 44 minutes. Total time: 59 minutes. Serves: 4. About 530 kcal and 16 g protein per serving.
Ingredients
- 400 g fusilli pasta
- 1 medium onion (150 g)
- 4 tablespoons oil
- 400 g button mushrooms
- 1 teaspoon Vegeta
- 1/2 teaspoon ground pepper
- 1 teaspoon sweet paprika
- 1 teaspoon dried basil
- 250 ml water
- 200 g cherry tomatoes
- 3 tablespoons tomato paste
- 1 teaspoon sugar
- 1 teaspoon salt
- 3000 ml water
- 30 g grated cheese (optional)
- 5 g fresh basil (optional)
Preparation
1. Peel and finely chop the onion. Clean and wash the mushrooms, then slice them. Wash the cherry tomatoes and cut them in half. 2. Heat the oil in a saucepan and sauté the onion for 4 minutes, until softened. 3. Add the mushrooms and sauté for 10 minutes, stirring now and then. 4. Add the Vegeta, pepper, sweet paprika and dried basil. Pour in 250 ml water, add the tomatoes and tomato paste, then simmer the sauce for 18 minutes, until thickened. Add the sugar and 1/2 teaspoon salt, then taste. 5. Bring 3000 ml water to a boil with 1/2 teaspoon salt. Add the pasta and cook for 10 minutes. Rinse under cold running water and leave to drain. 6. Put the pasta in a large bowl, pour the sauce over it and mix for 2 minutes, until the pasta absorbs the liquid. Serve warm or cold, with grated cheese or chopped fresh basil.
Notes
Choose firm mushrooms with dry caps; if they’re large, slice them thinner, while smaller ones can be sliced thicker. If the tomatoes are very juicy, simmer the sauce uncovered until it reduces. A simple green salad is enough on the side. For dinner at a set time, put the sauce on to simmer about 20 minutes before serving. Store leftovers in a sealed container in the fridge and eat within 3 days. As with simple pasta with tomato sauce, you can sprinkle on grated cheese or chopped basil; the cheese contains dairy, and wheat pasta contains gluten.
Frequently asked questions
Can I use regular tomatoes instead of cherry tomatoes?
Yes. Cut them into roughly 1 cm cubes and add them to the sauce at the same point.
Why did the pasta turn out too soft?
Next time, shorten the cooking time by 1 minute and taste a spiral before draining.
Will brown mushrooms work too?
Yes, use the same amount and slice them about 4 mm thick so they cook evenly.
