Pork chop is a delicious choice for a hearty meal, being not only tasty but also easy to prepare. We start by washing the pork chop in cold water, making sure to clean it of any impurities. After draining it well, we generously rub it with salt and pepper to add flavor. Then, we place it in a greased pan with oil or lard, taking care to cover it well to keep it juicy during baking. The pan is placed in the preheated oven, where the chop will be left to cook for about 50 minutes. It is essential to turn the meat halfway through the cooking time to achieve even browning on both sides. When a fork easily penetrates the meat, the chop is ready to be taken out of the oven and placed on a serving platter, covered with foil to keep warm. The sauce left in the pan is a true treasure and should not be discarded. If there isn't enough liquid left from the meat, we add a small amount of water over the burnt bits in the pan, using a knife to scrape the flavors from the bottom of the pan. By straining this mixture, we obtain a thick and flavorful sauce called "jiu," which will be served over the slices of chop and the prepared potatoes. Meanwhile, we take care of the potatoes. They are washed well and boiled in salted water, leaving them with their skins to preserve the flavor. After boiling, we drain them, peel them, and cut them into large cubes. In a pot, we sauté the flour in oil until golden, then extinguish it with milk, stirring constantly to avoid lumps. It is important to achieve a sauce with the consistency of pancake batter, and if lumps accidentally form, they can be removed with a strainer. After the sauce has boiled for 10 minutes, we take it off the heat, add salt, pepper, and beaten eggs, followed by the cubed potatoes, mixing well. We prepare a heat-resistant tray, greasing it with oil or lard, then spread the potato mixture in an even layer. On top, we pour sour cream, and if it is very thick, we can add it in pieces. We generously sprinkle grated cheese and place the tray in the oven, leaving it until it browns nicely. For serving, we calculate two slices of chop about 1 cm thick for each portion, accompanied by a square of potatoes cut directly from the tray. We add a teaspoon or two of jiu over each slice of meat and complete the plate with pickled cucumbers, coleslaw, or roasted peppers for a contrast of textures and flavors. This combination will not only delight the taste buds but will also bring a touch of joy to every meal.
