Cocoa and walnut loaf cake

Cocoa and walnut loaf cake gets its look from how you divide the batter: the plain layer goes in first, with the cocoa and walnut layer on top. The light, airy batter works well for a loaf cake, with a plain crumb underneath and the darker part on top. I cut it into narrow slices so you can see the two colors clearly. Preparation: 20 minutes. Cooking: 20 minutes. Total time: 40 minutes. Servings: 12. About 420 kcal and 8 g of protein per serving.
Ingredients
- 7 eggs
- 400 g sugar
- 1/4 teaspoon salt
- 1 vial vanilla essence or 15 ml lemon juice
- 10 tablespoons oil
- 250 g flour
- 100 g ground walnuts
- 1 tablespoon cocoa
- 15 g powdered sugar
Preparation
1. Heat the oven to 160°C. Beat the eggs with the sugar, salt and vanilla essence or lemon juice until the sugar dissolves. 2. Add 5 tablespoons of oil and mix, then stir in the remaining 5 tablespoons. Add the flour and mix until you have a smooth batter. 3. Divide the batter in two. Mix the ground walnuts and cocoa into one half. 4. Pour the plain batter into the loaf pan first, then add the walnut and cocoa batter. Bake for 20 minutes, then check with a toothpick; it’s ready when the toothpick comes out without wet batter. 5. Sprinkle with powdered sugar while the cake is hot.
Notes
Serve with black coffee. Keep it covered at room temperature for up to 3 days; the powdered sugar gets damp on the surface, so you can sprinkle it only on the slices you serve. Use a loaf pan about 25 × 11 cm, so the batter layer doesn’t come out too thin. Eggs taken out of the fridge ahead of time are easier to beat with the sugar. Very finely ground walnuts make a more compact layer, while coarsely ground ones leave visible pieces. You can replace the 100 g of walnuts with 100 g of ground hazelnuts; these are tree nuts too.
Frequently asked questions
Can I use whole wheat flour?
Replace no more than 50 g of the flour; using more may make the crumb denser.
Why does the cake sink after I take it out of the oven?
Keep the oven door closed for the first 18 minutes of baking and take the pan out only when the center no longer wobbles.
How do I keep the two layers from mixing?
Spoon the walnut batter over the plain layer in 3 portions, without mixing them.
