Stew with dough dumplings

Start by washing the meat well, choosing a juicy piece of beef or pork, depending on your preferences. Place the meat in a large pot, add enough water to completely cover it, a pinch of salt, and a bay leaf for extra flavor. Bring everything to a boil, then remove the foam that forms on the surface to achieve a clear and appetizing final result. Once the meat is half-cooked, add a large onion, finely chopped, which will help enrich the flavor. Let everything simmer until the meat becomes tender and easy to pull apart. After the meat is well cooked, remove it from the pot and let it cool slightly. Then, remove it from the bones and cut it into suitable pieces. To prepare the dumplings, take a bowl and add two fresh eggs, a cup of water, and a pinch of salt. Whisk the ingredients well with a whisk until you achieve a smooth mixture. Gradually add the flour, mixing continuously to avoid lumps. The final consistency should be similar to that of a soft dough, but not excessively sticky. In the meat broth, carefully and using a spoon, form dumplings that you will add to the pot. Let the dumplings boil until they rise to the surface, indicating they are cooked.
