Garlic and smoked bacon stuffed lamb steak

For this delicious recipe, we will start by preparing the meat with special attention. It is essential to use a piece of quality meat that is juicy and flavorful. We focus on each step, as every detail contributes to an exceptional final result. We begin by making small cuts in the meat using the tip of a well-sharpened knife. These cuts not only help the flavors penetrate but also ensure the meat cooks evenly. In each cut, we place slices of garlic, cut in half or quarters, as well as a few slices of smoked bacon that will infuse the meat with a special taste. Once we have finished this stuffing process, it is time to season the meat. We generously salt and pepper it, ensuring that each piece is well covered with these spices. Then, we place the meat in a tray in which we have previously melted lard, an ingredient that will add extra flavor. On top, we sprinkle fresh rosemary, which will provide a Mediterranean aroma to the dish. We also add a few garlic cloves cut in halves and thinner slices of bacon to intensify the flavor. To finish the preparation, we pour 500 ml of white wine over the meat, adding water until it is completely covered. The oven should be preheated to 180 degrees Celsius, and the tray with the meat is placed in for about 40 minutes. Halfway through, we turn the pieces of meat to ensure they brown evenly on all sides. We cook until the juice reduces and the meat becomes beautifully browned, with a tempting crust. Alongside this savory dish, we will prepare a salad of red beet and horseradish that will perfectly complement the meal. Usually, I roast the beet in the oven, a trick that preserves its vibrant color and gives it an intense flavor. Once roasted, I grate it on a large grater, adding freshly grated horseradish on a fine grater. We mix the two ingredients and season them with salt, vinegar, and a splash of oil, adjusting the taste to preference. This refreshing salad will add a pleasant contrast to the juicy meat, providing an unforgettable culinary experience.
