Nettle stew with turkey livers

Salad - Nettle stew with turkey livers by Miruna A. - Recipia

Nettle stew with turkey livers gets its body from cornmeal, while the turkey livers are browned separately. Onion and garlic go into the same base, and the chopped nettles stay soft and easy to stir. I remove the thick stems before chopping the nettles so I don’t notice them on my plate. Prep: 20 minutes. Cook: 24 minutes. Total time: 44 minutes. Servings: 2. About 590 kcal and 52 g protein per serving.

Ingredients

  • 400 g nettles
  • 1500 ml water
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 medium onion (150 g)
  • 1 tablespoon pepper paste
  • 2 garlic cloves
  • 2 tablespoons oil
  • 2 tablespoons cornmeal
  • 500 g turkey liver

Preparation

1. Clean the nettles, washing them in several changes of water, then drain. 2. Bring 1500 ml water and 1/2 teaspoon salt to a boil. Add the nettles and boil for 3 minutes, until softened, then drain and set aside 150 ml of the cooking liquid. Finely chop the nettles. 3. Finely chop the onion and cook it in a pan with 1 tablespoon oil for 4 minutes, until softened. Finely chop the garlic, add it and cook for 1 more minute. 4. Add the pepper paste, nettles and cornmeal to the pan. Pour in 150 ml of the reserved cooking liquid, add 1/4 teaspoon salt and 1/4 teaspoon pepper, and cook for 6 minutes, stirring gently, until thickened. 5. Trim the turkey livers and pat them dry with paper towels. Heat 1 tablespoon oil in a clean pan and fry the livers for 10 minutes, turning them to brown all over, until cooked through. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper, and serve with the nettles.

Notes

The dish keeps for up to 3 days in the fridge in a closed container; you can make the nettle base a day ahead and fry the livers close to serving time. When buying nettles, choose young ones with small leaves and thin stems; mature ones have more tough strands and take longer to clean. If the stems are thick, remove them before boiling the leaves. Mature leaves may need 2 more minutes of boiling, until softened. Sometimes the base stays too runny, especially when the nettles have retained a lot of water; leave it on the heat for a few more minutes, until liquid no longer pools around the edge of the pan. Instead of turkey livers, you can fry 500 g chicken livers, which are usually smaller, for about 7-8 minutes. Fresh bread is good for scooping up the thick sauce, which clings to the spoon.

Frequently asked questions

Can I use frozen nettles?

Yes, use 400 g frozen nettles, thawed and well drained; you can add them straight to the pan without boiling them separately.

How long should I cook the livers if they’re in large pieces?

Cut large pieces in half and cook them for 4-5 minutes on each side, until they’re no longer raw in the middle.

How can I check that the livers are fully cooked?

A thermometer inserted into the thickest part should read 74°C. Without a thermometer, cut one open and check that it’s no longer raw in the center.
