Pork liver with greens and bacon

To prepare a delicious organ meat loaf, the first step is to ensure that the organs are well cleaned and washed. After washing them, we put them to boil in a large pot of water, adding a little salt if desired to enhance the flavor. We let them boil for about 45 minutes or until they become tender. Once boiled, we drain them and let them cool slightly. It is important to peel the tongue while it is still hot, as the skin will come off much more easily. After the organs have cooled, we cut them into large pieces and pass them through a food processor. It is essential not to turn them into a paste, but just to chop them, so that we maintain a slightly grainy texture, which will give our loaf consistency. At the same time, we chop the bacon in the processor as well, so that it integrates evenly into the mixture. The green onion, with its fresh aroma, must be cleaned and washed well, then cut into thin rounds. The dill and parsley are washed, the tougher stems are removed, and they are finely chopped, preparing them to be added to our mixture. This combination of greens will give the loaf a special aroma and a vibrant color. In a large bowl, we mix the chopped organs with the bacon, green onion, and all the herbs. We season with salt and pepper to taste, being careful not to overdo it with the salt, as the bacon is already salty. After the mixture is well combined, we add the beaten eggs, which will bind the mixture, and the breadcrumbs, which will help absorb moisture. We prepare a loaf pan, lining it with baking paper, and transfer the mixture into it, leveling the surface well. If we have a smaller pan, we can use one of appropriate size, but it is important not to overfill it, as the loaf will rise during baking. Beaten egg foam is generously brushed over the surface of the loaf to achieve a golden and appetizing crust. We place the pan in a preheated oven at a moderate temperature of about 180 degrees Celsius. We let the loaf bake for 40-50 minutes, or until it is browned on top and well cooked inside. Finally, we take it out of the oven and let it cool slightly before cutting. The loaf can be served warm or cold, alongside a fresh salad or pickles. Enjoy your meal!
