Oven-Baked Spare Ribs

To prepare a delicious dish of marinated spareribs, we start by making the flavorful marinade that will transform the meat into an unmistakable delicacy. In a mortar or, more simply, in a food processor, we add a few cloves of fresh garlic, which will provide an intense taste and unmistakable aroma. We also add chili pepper, both dried and finely sliced fresh, to give a touch of spiciness. These ingredients are complemented by paprika, which will add not only color but also a delicate, smoky flavor. To provide an extra freshness and a citrus note, hurry to add the grated zest of half an orange and half a lemon. These aromas will blend perfectly with the other ingredients. We continue with 3-4 tablespoons of extra virgin olive oil, which will help create a creamy paste, and, don't forget, salt to taste. We mix everything well until we obtain a fine, aromatic paste that will embrace each slice of spareribs. Once the marinade is ready, we generously brush each slice of spareribs, ensuring it penetrates well into the meat. We place the slices in a dish covered with plastic wrap and leave them in the refrigerator for at least an hour, but ideally overnight, to allow the flavors to infuse well. After the marinating time has passed, we turn our attention to the oven. We preheat the oven to 180 degrees Celsius. We place the slices of spareribs in a baking tray, making sure to leave enough space between them. We add a cup of water and, depending on the size of the tray, add between 50-100 ml of oil. We salt everything well, cover the tray with aluminum foil, and let it bake for about an hour. After this interval, we take the tray out of the oven, remove the foil, and drizzle the pieces of meat with the juice of a fresh orange, mixed with a little honey to add a sweet taste. We put the tray back in the oven, without foil, and let it brown until the meat is beautifully colored and the ribs are perfectly cooked. Finally, we take the tray out and cover it again with foil, letting it rest for about 10 minutes before serving, to allow the juices to redistribute in the meat.
