Oven-Baked Chicken Thighs with Mushrooms and Potatoes

We start by choosing fresh mushrooms, such as champignon or porcini, which will bring a special flavor to the dish. In the first step, we wash and clean the mushrooms, then slice them thinly. We boil them in a pot of water with a pinch of salt for about 10 minutes until they become tender. This process will not only soften them but also help remove impurities. Meanwhile, we take care of the potatoes. We choose medium-sized potatoes, peel them, and slice them thinly, about 1 cm thick. These slices will need a quick treatment in cold water to prevent oxidation. After the mushrooms are boiled, we drain them and let them cool slightly, then mix them with the potatoes, adding small cubes of meat, preferably chicken or pork, which will cook evenly and add extra flavor. In a separate bowl, we prepare a spice mix to enhance the ingredients. We use salt, freshly ground pepper, minced garlic, and some herbs, such as rosemary or thyme. We pour this mixture over the vegetables and meat in the bowl, mixing well to ensure all ingredients are evenly coated with spices. After seasoning, we transfer everything to a baking dish, which we have lightly greased with olive oil to prevent sticking. We preheat the oven to 180 degrees Celsius and place the dish inside, allowing it to bake for 45 minutes. Halfway through, it is recommended to gently stir the ingredients to ensure even cooking. Once the time is up, we take the dish out of the oven and enjoy the delicious aroma that has filled the entire house. The dish should be golden on top, with soft potatoes and tender meat. It is a perfect meal for a family dinner or a special occasion, being both nourishing and tasty. We serve it warm, alongside a fresh salad, which will add a pleasant contrast. Enjoy your meal!
