Rădăuți Soup

To prepare a delicious chicken soup with vegetables, we start by taking a fresh chicken breast, which we will place whole in a large pot of cold water. It is important to use cold water to allow the flavors to develop as the chicken simmers. Once we have placed the chicken breast in the water, we put the pot on medium heat and wait for it to reach boiling point. Here, we will notice the formation of foam, which we will need to remove using a skimmer. This step is essential to achieve a clear and tasty soup. Once the foam is no longer appearing, it is time to add the vegetables. The choice of vegetables can vary depending on preferences, but a classic mix includes carrots, celery, and onion, all cleaned and cut into large pieces. These vegetables will not only provide flavor to the soup but will also contribute to a pleasant texture. We let everything simmer until the chicken breast and vegetables become tender. After about 30-40 minutes, we remove the vegetables from the broth and let the chicken breast cool slightly. Once the chicken breast has cooled, we slice it into thin strips and put it back into the pot with the remaining broth. The cooked vegetables are puréed or passed through a fine sieve to obtain a smooth puree that will enrich the soup's consistency. We add this puree to the pot and let everything boil together for another 5 minutes until the soup comes to a boil. Meanwhile, we beat a few eggs well with sour cream, creating a homogeneous and creamy mixture. We add a ladle of hot soup to the egg and sour cream mixture to temper the eggs, thus avoiding their coagulation in the soup. Finally, we pour this mixture into the pot and stir well to integrate all the flavors. Finely crushed garlic is the next ingredient that helps us, bringing an extra flavor. We set the pot aside from the heat and add salt and vinegar to taste, making sure to adjust the flavors according to everyone's preferences. Before serving, we sprinkle finely chopped fresh parsley on top for a colorful appearance and a touch of freshness. The soup can be served hot, and for those who appreciate a more sour taste, we recommend adding a little vinegar directly to the plate. This dish is not only nourishing and comforting but also full of flavors, making it perfect for a family meal or a quiet evening at home.
