Country chicken with sour cream

To prepare a delicious chicken stew, we start by preparing the meat. We take the chicken pieces and wash them well under a stream of cold water, removing any impurities. We cut the thighs in half, separating the drumsticks from the upper part, ensuring that each piece will be cooked evenly. Next, in a large pot, we heat a generous amount of oil, enough to cover the bottom. When the oil is hot, we add the chicken pieces and brown them on all sides until golden, which will give them a rich and appetizing flavor. This process will not only enrich the meat's aroma but also create a delicious crust. Once the meat is browned, we add enough water to completely cover the chicken, taking care not to exceed the edge of the pot. We cover it with a lid and let it simmer over medium to high heat. During this time, the aroma of the meat will begin to blend with that of the oil, and the steam will fill the kitchen with an irresistible fragrance. In the meantime, we take care of the vegetables. We peel the onion, chopping it finely, and slice the green onion into thin rounds to add a fresh and crunchy note to the dish. We also peel the carrot and cut it into thin rounds so that it cooks evenly. When the meat is about half cooked, we add all these vegetables to the pot, sprinkling in salt and pepper to taste. We don’t forget the bay leaf, which will enhance the dish's aroma. During the boiling process, if we notice that the liquid is reducing too much, we can add a little boiling water to keep everything moist and flavorful. We let it boil well until the meat becomes tender and the vegetables are well cooked. Towards the end, we reduce the heat to low, add the sour cream, and mix well to integrate the ingredients. We let it simmer for another 1-2 minutes, then set the pot aside. For a fresh and vibrant taste, we finely chop the fresh dill and sprinkle it over the stew, then cover the pot for 5 minutes to allow the flavors to blend perfectly. It is served warm, alongside a side of mashed potatoes or polenta, to complete this delicious meal. Enjoy your meal!
