Chicken Roll, Vlad Zografi Brand

Preheat the oven to 200 degrees Celsius. We start with the chicken breast, which we tightly wrap in two slices of bacon to create a savory crust that will infuse the flavors. It's important to ensure that the bacon slices are well positioned so that the chicken breast is not exposed during baking. The next step is to prepare the mushrooms: they are cleaned, washed, and cut in half or into thirds, depending on their size. If they are smaller, we can leave them whole to add a nice and interesting look to the dish. The onion is peeled and finely chopped, thus preparing a fragrant mixture that will perfectly complement the chicken breast and mushrooms. Now, we are ready to assemble the portions of the roll. We take four pieces of parchment paper, large enough to wrap each portion of the roll. We place each piece of paper on a piece of aluminum foil, making sure to leave enough space to roll the package. On each piece of paper, we place a quarter of the mushrooms, a quarter of the chopped onion, a bay leaf (optional, if you prefer), and drizzle with a tablespoon of white wine to add a touch of acidity and flavor. We season with salt and pepper to taste. On top of the mixture, we place the chicken breast roll wrapped in bacon. Once all the ingredients are arranged, we close the package by rolling it up, ensuring it is well sealed, then we roll it in the aluminum foil to prevent moisture loss during baking. The procedure is repeated for all four portions. For an extra flavor boost, I also cut and fried some bacon pieces that I placed on top of the mushrooms before putting the tray in the oven. We bake the rolls for about half an hour, during which the flavors combine and the bacon becomes crispy. They are served hot, alongside a fresh vegetable salad or a side of oven-baked fries. This recipe is not only a delight for the taste buds but also a way to bring a touch of creativity to the kitchen. Inspired by Vlad Zografi's recipe, I adapted the ingredients based on what I had on hand, and the result was a true success at today's table.
