Potato stew with tochitură, a Romanian pork stew, simmers in one pot with the meat and vegetables until the potatoes are tender and the sauce thickens. I cut the potatoes into cubes of about 3 cm and let them simmer gently; I like to find them whole in the sauce, not almost completely broken down. Prep: 20 minutes. Cook: 52 minutes. Rest: 0 minutes. Ingredients
- 500 g pork neck (cubed)
- 1 large onion (200 g)
- 1/2 red pepper (75 g)
- 1/2 green pepper (75 g)
- 1 medium carrot (80 g)
- 1 tablespoon tomato paste
- 1 teaspoon sweet paprika
- 1 kg potatoes
- 1500 ml water
- 1 teaspoon peppercorns
- 2 bay leaves
- 15 g fresh parsley
- 1 teaspoon salt
- 1 tablespoon wheat flour (optional)
- 60 ml cold water (optional)
Preparation
1. Pat the meat dry with paper towels and cut it into cubes of about 3 cm. Put it in a pot and cook for 8 minutes, until the fat renders and the meat starts to brown. 2. Finely chop the onion, red pepper, green pepper and carrot. Add them to the meat and cook everything for 8 minutes, stirring from time to time, until the vegetables soften. 3. Add the tomato paste and sweet paprika. Stir for 1 minute, until combined. 4. Peel the potatoes and cut them into cubes. Add them to the pot with 1500 ml water, the peppercorns, bay leaves, parsley and salt. Simmer uncovered over low heat for 30 minutes, until the potatoes are tender and the sauce has reduced and thickened. 5. If the sauce is still too thin, mash a few potato cubes in the pot. Alternatively, mix the flour with 60 ml cold water until smooth, pour it into the stew and simmer for another 5 minutes.
Notes
Serve the stew with pickles or hot peppers. Keep it in a covered container in the fridge for up to 3 days. When reheating, add 2 tablespoons of water per serving, since the sauce thickens as it sits in the fridge. Pork neck with a little fat renders lard in the pot, while very lean pieces can turn out drier. You can use 500 g sausages instead of the meat, but use only half a teaspoon of salt at the start and adjust the seasoning towards the end. Starchy potatoes break down faster than firm-fleshed ones and thicken the sauce more. If you use them, cut the cubes a little larger so there are still pieces in the bowl. Sometimes the sauce thickens before the potatoes are tender; in that case, pour in 100 ml hot water.

Can I use chicken thighs instead of pork?
Yes. Add 500 g boneless thighs, cut into pieces, and simmer the stew for about 25 minutes after adding the water, until the meat and potatoes are cooked through.
What should I do if the stew has stuck to the bottom of the pot?
Transfer the unstuck portion to another pot without scraping the bottom. Add 100 ml hot water and let it simmer for another 3 minutes over low heat.
Can I use beef?
Yes, but beef cubes need to simmer for about 60 minutes before you add the potatoes. Top up with hot water if the liquid reduces too much during this time.
