Pork Steak with Raisins and Apple

The meat is salted, peppered, coated with paprika, and set aside to absorb the flavors of the spices. In a mortar, we place a few fresh leaves of rosemary and thyme, add a few peeled garlic cloves, a pinch of salt, and a little pepper. Using the pestle, we grind the ingredients until we obtain a fragrant paste. This combination of herbs will give the meat a special flavor. Later, we add olive oil and continue to grind, thus mixing the flavors into a rich emulsion. This marinade will help us infuse the flavors into the meat, so with the help of a kitchen brush, we coat the meat on both sides, ensuring it is evenly covered. After finishing with the meat, we sprinkle a few raisins on each piece; they will add a sweet note and an interesting texture to the dish. We now prepare the apple; we peel it and cut it into small cubes, then add them among the pieces of meat. The fruit's aroma will contrast nicely with the other ingredients, bringing an extra freshness. To ensure moisture during cooking, we add 3-4 tablespoons of water to the tray, then place everything in the preheated oven at 180 degrees Celsius. It is important to monitor the roast during baking. At the end of the cooking time, when the meat is almost done, we add half a cup of white wine. This will intensify the flavors and provide a fine note. A useful tip is to constantly check if the roast has sauce, and if necessary, with a spoon, add a bit of water or sauce over the meat to prevent it from drying out. This way, it will remain juicy and flavorful, and the raisins will not darken but will stay soft and full of taste. Once the roast is ready, we let it rest for a few minutes before slicing it. Served with a side of steamed vegetables or mashed potatoes, this dish will surely be a delight at any meal. Enjoy every bite and savor the unmistakable flavors it offers!
