Yellow Bean Pods with Pork

Place all these vegetables in a large pot, adding two tablespoons of sunflower or olive oil, as they are, directly from the freezer. Put the pot on medium heat and sauté the vegetables for 2-3 minutes, stirring occasionally. This process will help release the flavors and make the vegetables more tender. Once the vegetables have started to soften, add the pieces of meat (it can be chicken, pork, or beef, depending on your preferences) and continue to sauté for a few minutes. At this stage, it is good to add a little water, just enough to partially cover the meat. This will create a savory sauce that will enrich the dish. After about five minutes, add the frozen beans, making sure they are evenly distributed. Pour in enough chicken, vegetable, or beef broth to cover the ingredients in the pot, leaving only 2 fingers of water above the beans. Let the dish simmer on low heat, being careful not to turn it into a soup. If you notice that the water is reducing too much, add a little liquid so that the dish remains thick. While it simmers, take the slices of bacon and cut them into small pieces. Fry the bacon in a separate pan until it becomes crispy, then add it to the pot with the beans, without leaving the fat in the pan. This step will add a special flavor to the dish. Don't forget to season with salt and pepper to taste, and if you like the aroma of garlic, you can add a few crushed cloves towards the end of the cooking. Once all the ingredients are well cooked and the sauce has a pleasant consistency, turn off the heat and sprinkle fresh chopped parsley on top for an extra touch of freshness and color. Serve with a spoonful of sour cream, which will add creaminess and enrich the taste of the dish.
