Pork Roll with Minced Meat and Mushrooms

Pork tenderloin is an excellent choice for festive meals or special occasions, due to its juicy texture and delicious flavors it can offer. We start by preparing the tenderloin, cutting it lengthwise to open it like a book. Using a meat mallet, we gently pound the meat, being careful not to damage it, but rather to make it thinner and more even. Then, we season the meat with a mix of pork spices, which may include salt, pepper, garlic powder, sweet or smoked paprika, and possibly a little rosemary or thyme for added flavor. We cover the tenderloin with plastic wrap and let it chill in the refrigerator to firm up a bit and allow the spices to penetrate. In the meantime, we dedicate ourselves to preparing the filling. We peel the onion, bell pepper, and mushrooms, then chop them finely. In a heated pan, we add a little oil, and when it is well heated, we add the onion to sauté. It will become transparent and emit an enticing aroma. After a few minutes, we add the bell pepper and then the mushrooms. We stir constantly to ensure the vegetables cook evenly and retain their texture. After the mushrooms have softened, we add the minced meat, mix well, and add a little water to help the steaming process. We season with salt and pepper to taste, being careful not to overdo it, as the filling will absorb some of the tenderloin's flavor. Once the filling is ready, we take the tenderloin out of the refrigerator, remove the wrap, and spread the filling evenly over the entire surface of the meat. Carefully, we roll the tenderloin, tightly packing the filling inside. Once rolled, we tie it with kitchen twine to keep it compact during baking. In a heat-resistant dish, we place the roll and add water, white wine, and a splash of oil, to give it a special taste while baking. We cover the dish with aluminum foil to retain moisture. We place the dish in the preheated oven at 180 degrees Celsius and let it bake for about 40 minutes. After this interval, we remove the aluminum foil and let the roll brown for another 10 minutes until it acquires a beautiful and appetizing crust. Once ready, we take the roll out of the oven and let it cool slightly before slicing it. Served with a side of vegetables or mashed potatoes, it will surely be a dish appreciated by all who have the pleasure of tasting it.
