Chocolate mousse cake

Dessert - Chocolate mousse cake by Iridenta B. - Recipia

Chocolate mousse cake has a soft cocoa sponge and three layers of dark and milk chocolate cream. The sponge isn't soaked, and the top has mousse rosettes and little marzipan flowers. I choose dark chocolate with an intense flavor so the mousse isn't too sweet. Preparation: 45 minutes. Cooking: 55 minutes. Resting: 18 hours. Total time: 19 hours and 40 minutes. Servings: 12. About 780 kcal and 10 g protein per serving.

Ingredients

For the sponge

  • 220 g flour
  • 240 ml milk
  • 400 g sugar
  • 75 g cocoa
  • 115 g melted butter
  • 2 eggs
  • 240 ml hot water
  • 6 g baking powder
  • 7 g baking soda
  • 5 ml vanilla essence

For the mousse

  • 300 g dark chocolate
  • 100 g milk chocolate
  • 800 ml whipping cream (30% fat)

For the decoration

  • 50 g white chocolate
  • 100 g marzipan
  • 1 g food coloring

Preparation

1. In a bowl, mix the flour, cocoa, sugar, melted butter, milk, baking powder, baking soda, eggs and vanilla essence for 3 minutes. Pour in the hot water, stir first with a wooden spoon, then beat with a mixer for 5 minutes. The batter will be runny. 2. Pour the batter into a 24 cm round pan lined with baking paper. Bake at 180°C for 50 minutes, until a toothpick inserted into the sponge comes out clean. 3. Let the sponge cool and chill it for 8 hours, then cut it into 3 layers. 4. Break the dark and milk chocolate into small pieces. Put them in a saucepan with 400 ml of whipping cream and melt over very low heat for 5 minutes, stirring until smooth. Refrigerate for 2 hours, until completely cool. 5. Whip the remaining 400 ml of whipping cream for 3 minutes, until it holds its shape on the whisk. Gradually fold it into the cold chocolate cream until you have a smooth mousse. 6. Put one sponge layer on a serving plate and spread some of the mousse on top. Repeat with the other layers and the remaining cream, then refrigerate the cake for 8 hours. 7. Grate the white chocolate over the sides. Color the marzipan with food coloring and shape it into little flowers. Using a piping bag fitted with a star nozzle, pipe rosettes on top and decorate with the flowers.

Notes

I made it for my godmother, who was going to be our wedding godmother two weeks later and was visiting our home for the first time. She really likes chocolate. My husband, parents-in-law, parents and godfather enjoyed the cake too. After a hearty lunch on a warm day, a cold slice was just right for dessert. The cake can be made the day before and kept covered in the fridge for up to 3 days. For the decoration, the grated white chocolate can be replaced with 50 g of flaked almonds; the marzipan contains almonds, and the sponge contains gluten, eggs and dairy. Cut small slices and serve them with black coffee. When I make it for a meal, I bake the sponge the day before and assemble the cake once the cream is cold. Use a 24 cm pan for the stated baking time; in a smaller pan, the sponge will be thicker and may need more time. Sometimes the mousse is too soft to spread; leave it in the fridge for another 20 minutes.

Frequently asked questions

Why does the batter look very runny?

After adding 240 ml of hot water, the batter flows easily. Check the center with a toothpick after 45 minutes; if it has wet batter on it, continue baking.

How can I cut the sponge into three layers without it crumbling?

Use a long serrated knife and keep the blade horizontal. If the sponge is still soft, chill it for 30 minutes before cutting.

Can I use only milk chocolate in the mousse?

You can replace the 300 g of dark chocolate with 300 g of milk chocolate. The cream will be sweeter.

What should I do if the ganache turns grainy?

Take the saucepan off the heat and stir vigorously for 1 minute. If there are still lumps, pass the cream through a fine sieve before chilling it.
