Pumpkin Soup with Yogurt (Buttermilk, Whey)

To prepare a delicious pumpkin soup, we start by preparing the necessary ingredients. You will need a medium onion, a pumpkin weighing about 500 grams, a few tablespoons of olive oil, salt to taste, a natural yogurt, and fresh or dried dill. If you wish, you can also add rice to enrich the texture of the soup. In a soup pot, heat the oil, then add the finely chopped onion. Sauté the onion over medium heat until it becomes translucent and releases its flavors. This step is essential to provide the soup with a rich flavor base. After the onion has softened, add the pumpkin cut into cubes. Mix well to combine the ingredients, then sprinkle a little salt to enhance the flavors. Once the pumpkin has softened, add enough water to cover all the ingredients. Put the lid on the pot and let everything simmer on low heat until the pumpkin becomes very soft. If you desire a thicker soup, you can let it simmer a little longer. Use a spatula to stir occasionally, ensuring that the pumpkin partially mashes, releasing starch and giving the soup consistency. When the pumpkin is ready, take the pot off the heat and add the yogurt, stirring well to incorporate it evenly. The soup will acquire a creamy texture and a slightly tangy flavor. Add the finely chopped dill, whether fresh or dried, and stir again. Cover the pot and let the soup rest for a few minutes, during which the flavors will blend perfectly. Pumpkin soup can be served warm or cold, almost at room temperature. It is an excellent choice for a light meal or as an appetizer. If you want a heartier version, you can add rice at the beginning, alongside the pumpkin. It will cook in about 18-20 minutes, and when it is ready, it will perfectly complement the soup. Enjoy this comforting and flavorful dish that brings a touch of autumn to every spoonful!
