Spring pie with meat and homemade dough

We begin the culinary adventure by preparing the dough, an essential step to create a delicious pie. In a generous bowl, we combine soft butter with creamy yogurt, a fresh egg, salt, and baking powder. We mix these ingredients with a spatula or a wooden spoon until well combined. Then, we start adding the flour, little by little, until we obtain a dough that can be rolled out. It is important to use the flour gradually to control the consistency of the dough. Depending on the moisture of the ingredients, we may need up to 1 kg of flour. After obtaining an elastic and non-sticky dough, we knead it with our hands until it completely detaches from our palms. This step is crucial to activate the gluten in the flour, which will give the dough a pleasant texture. Once the dough is kneaded, we wrap it in plastic wrap and let it rest in the refrigerator for half an hour. This resting period will make the dough easier to handle. In the meantime, we take care of the filling. We finely chop the onion and sauté it in a little hot oil until it becomes glassy and fragrant. Then, we add the minced meat, seasoning it with salt, pepper, and other preferred spices, such as paprika or thyme, to give it a rich flavor. We let the meat fry well, stirring constantly until it is browned. When ready, we set the pan aside and let the filling cool slightly, then we add the beaten egg and finely chopped greens, mixing well to combine the flavors. After the dough has had time to cool, we sprinkle flour on the work surface and divide the dough into two uneven parts: the larger one will be the base of the pie, while the smaller one will become the lid. We roll out the larger dough with a rolling pin until we obtain a uniformly thick sheet. We roll the dough onto the rolling pin and carefully transfer it to the baking tray lined with parchment paper, adjusting it with our hands to form the edges. We make sure that any excess dough is cut off to prevent burning during baking, and we keep the rest for decoration. We then fill the dough with the well-cooled meat mixture, spreading it evenly. We also roll out the smaller dough, which we carefully place over the filling. We decorate the pie with cut strips of dough, which can be arranged in interesting shapes, giving it a rustic and attractive appearance. We brush the surface with a beaten egg, which will help achieve a golden and appetizing crust, and then sprinkle grated cheese on top for extra flavor. The pie will be baked in a preheated oven at a moderate temperature for 25-30 minutes, or until it becomes golden and crispy. The aroma that will fill the kitchen during baking will be irresistible. Once it is ready, we let it cool slightly, then we can serve it warm, alongside a fresh vegetable salad.
