Rabbit meat in a crispy hazelnut crust

Preparation: The first step in this delicious recipe is marinating the rabbit meat. In a container, I combined water, olive oil, white wine, bay leaves, fresh basil, salt, and a little pepper. I mixed the ingredients well, ensuring that all the flavors blended perfectly. Then, I added the rabbit meat and let it marinate in the cold for about two hours. This step is essential to allow the meat to absorb all the delicious flavors. Meanwhile, I decided to take care of the nuts. With the help of a towel, I wrapped a bag of nuts and crushed them with a rolling pin, achieving a fine texture that will add extra crunch to the final dish. The red beet, a star ingredient in this recipe, I roasted in the oven, as its flavor is much more intense and sweet than if it were boiled. After it cooled, I sliced the beet into thin pieces and marinated it in a mixture of three tablespoons of Costa d'Oro oil, white wine vinegar, cumin, a bay leaf, and 50 grams of sugar. It is good to prepare this marinade a day in advance, so the flavors develop fully. The carrot, another important ingredient, I boiled in salted water and then turned it into a fine puree, adding a little homemade butter for a rich and creamy taste. Additionally, I prepared a sweet chili jam, to which I added raisins and let the mixture marinate, so the sweetness blends perfectly with the spiciness of the peppers. After the rabbit meat was marinated, I removed it from the marinade mixture and rolled it in the crushed nuts, making sure it was well coated. I placed the meat in the baking tray, where I also poured the remaining marinade. I covered the tray and placed it in the preheated oven, letting it bake for about one hour and twenty minutes. When the meat turned brown and developed a crispy crust, I took it out and placed it on a plate. I served the dish with a dressing of sweet chili jam and raisins, which added a note of freshness and a pleasant contrast of flavors. This combination of ingredients makes every bite a true explosion of tastes, perfect for a special meal.
