Chicken paprikash with cabbage salad and homemade bread

To prepare a delicious chicken paprikash, we start by preparing the meat. We cut the chicken into separate pieces: the wings, the thighs, and the breast into quarters. It is important to clean the meat well, removing the skin from the thighs and breast, leaving only the skin on the wings to maintain juiciness. After washing all the chicken pieces well, we place them in a clay pot, which will help retain the flavors. We continue with the vegetables: we peel the carrots and cut them into rounds, slice the onion into thin rings, and cut the peppers into sticks or cubes, according to preference. The fresh, juicy tomatoes are cut into large cubes. We add all these vegetables to the pot with the chicken, along with the rest of the ingredients, except for the potatoes, parsley, and basil. We gently stir with a spoon to combine the flavors, then cover the pot with a lid and place it in the preheated oven at 160 degrees Celsius for one hour. After the time has passed, we take the pot out of the oven. It is best to shake it gently instead of stirring with a spoon, to avoid crushing the vegetables. We now add the finely chopped parsley, the diced potatoes, and the fresh basil. We mix again, being careful not to burn ourselves, as the pot will be very hot. We place the lid back on and let it bake for another 1 hour and 20-30 minutes at a temperature of 150 degrees. In the meantime, we prepare the salad, which will perfectly accompany this dish. When the paprikash is almost ready, we cut the cabbage into thin strips using a sharp knife or a food processor, if preferred. We add salt and pepper to taste, oil, vinegar, and a little thyme, then mix well. We let the cabbage soften, which will add a crunchy and fresh note to the dish. To finish the meal, we prepare a homemade bread with whey, which will perfectly complement the paprikash. The dough is prepared in the bread machine, where we add the ingredients in the correct order. After 15 minutes of rising, we transfer the dough to a greased loaf pan. We let it rise for another 15-20 minutes, then bake in the preheated oven at 180 degrees for 30 minutes. After baking, we let the bread cool and then serve it alongside the aromatic paprikash and fresh salad. Enjoy your meal!
