We let the mixture simmer over low heat for 10 minutes, so the mint flavor infuses well into the water. After the time has passed, we use a fine sieve to strain the mixture into another clean pot, removing the mint leaves. We then place the strained syrup back on low heat and add the gelatin. It is important to stir constantly with a spatula or whisk to ensure that the gelatin completely dissolves in the syrup. Once the gelatin is integrated, it is time to add the freshly squeezed lemon juice. The tart flavor of the lemon will balance the sweetness of the syrup and add an extra freshness.
