Oven-baked pork tenderloin with white sauce and mushrooms

Pork tenderloins are an excellent choice for a special meal, and their preparation can become a remarkable culinary experience. We start by washing the tenderloins well under a stream of cold water, ensuring we remove any impurities. After washing them, we pat them dry with a kitchen towel to remove excess water, so we can achieve an even browning. In a deep pan, we melt a generous piece of butter, letting it completely melt. We add a few sprigs of fresh thyme, which will give the dish an irresistible aroma. We sprinkle a little salt and freshly ground pepper to enhance the flavors. Then, we place each tenderloin in the pan, ensuring not to overlap them so they brown evenly. We let them fry for a few minutes until they turn golden on each side, then remove them with a spatula and transfer them to a suitable oven dish. Meanwhile, we prepare a delicious mixture to accompany them. In a bowl, we combine dry white wine with water, add a tablespoon of tomato paste, peeled and crushed garlic, sweet paprika, salt, and pepper to taste. We mix the ingredients well until we obtain a homogeneous composition, which we pour over the tenderloins in the prepared dish. We cover the dish with aluminum foil and place it in the preheated oven at a moderate temperature, letting it bake for 40-45 minutes. After this time, we uncover the dish and, using a spoon, drizzle the tenderloins with the sauce from the dish a few times, at intervals of 5-7 minutes, to help them develop a delicious crust. We wait patiently until they are well browned and ready to serve. In parallel, we take care of the sauce that will accompany this dish. We wash the mushrooms and boil them in boiling water for 20-25 minutes. After boiling, we drain them and let them cool. Meanwhile, we cut the pickles into small cubes to add a crunchy note to the sauce. In a small bowl, we combine yogurt with sour cream, add the boiled mushrooms and pickles, season with salt and pepper to taste, and mix well. Once the tenderloins are ready, we take them out of the oven, slice them, and generously serve them on plates, adding the delicious sauce on top. The dish can be accompanied by a side of steamed vegetables or a fresh salad. Enjoy your meal!
