Pork heart stew with sauce (in a pressure cooker)

To prepare a delicious recipe, we will use fresh ingredients and techniques that highlight the flavors of each component. We start by finely chopping the carrots, which bring a natural sweetness to the dish, the bell pepper, which we choose larger to have a crunchy texture, and the leek, which we will use whole to let its aroma gradually reveal itself. In a pressure cooker, we add a tablespoon of olive oil, which will help sauté the vegetables, and the beef cubes, which will become juicy and full of flavor. These ingredients are sautéed well, without putting the lid on the pot, stirring constantly to avoid sticking. After a few minutes, when the vegetables become soft and their flavors combine, we add a glass of white wine. We let the wine evaporate, incorporating the flavors into the dish, and then add tomato juice, which will add a note of acidity and a vibrant color. If necessary, we can add a bit of water or broth to have enough liquid to cover the meat, without exceeding the maximum limit of the pressure cooker. We season with a little salt, being careful not to overdo it, as the sauce will concentrate during cooking. We close the lid of the pot and let it simmer on low heat for 30-40 minutes, starting to let the steam escape. After this period, we turn off the heat and let the steam release naturally, without forcing the pot open. Thus, the cooking process continues even after we remove the lid. Without the lid, we continue to cook on low heat. We add salt if necessary, freshly ground pepper to enhance the flavors, and bay leaves, which bring a special aromatic fragrance. We let it come to a boil again, and the dish is ready. The sauce will reduce considerably and thicken, resulting in a rich and savory dish. It is important to monitor the liquid level; if we haven't added too much at the beginning, after 20 minutes of boiling we can check its consistency. If the sauce is too thin, we can close the lid again, ensuring that the steam hole is clean, and let it boil for another 20 minutes from when it starts to whistle, thus achieving a consistent and flavorful dish. This recipe will turn an ordinary meal into a true delicacy that will impress family and friends.
