Sweet Cabbage Soup with Sour Cream

Start by boiling chicken bones or your favorite vegetables in a large pot of water. Let it simmer so that the flavors combine perfectly. After a few hours, strain the broth, keeping the flavorful liquid. The boiled vegetables can be used later for a tasty salad. In the meantime, prepare the ingredients for the cabbage soup. Peel and finely chop the onion. Then, clean the vegetables - carrots, celery, and parsley - and cut them into small cubes or slices, depending on your preference. The cabbage needs to be fresh, so choose a nice cabbage without spots. Once you’ve removed the dirty outer leaves, wash the cabbage well, then cut it in half. Slice it into thin strips, similar to noodles, which will help it cook evenly. Now, it’s time to cook the vegetables. In a deep pot, melt the butter over medium heat. Add the onion and chopped vegetables, sautéing them until they become translucent and release their flavors. After a few minutes, add the cabbage slices to the pot and stir constantly to prevent sticking to the bottom. Let them sauté together, stirring periodically, until the cabbage changes color and becomes softer. Once the vegetables are ready, add the reserved broth, about 3 liters, and let it boil. Check occasionally to ensure the cabbage is cooking evenly. Meanwhile, put a pot of salted water to boil for the noodles that will complete this dish. Boil the noodles according to the package instructions, but do not let them cook completely; they should be al dente. After the noodles are cooked, drain them and rinse under cold running water to stop the cooking process. Add the noodles to the boiling cabbage soup and let them simmer together for a few minutes so that the flavors meld beautifully. Finally, turn off the heat and let the soup rest for a bit. Serve the soup hot, adding plenty of sour cream for extra creaminess. If desired, you can also add garlic croutons, which provide an intense and aromatic flavor. Optionally, for an extra touch of flavor, sprinkle some fresh thyme leaves into the soup. This way, you will achieve a delicious, nourishing, and aromatic cabbage soup with noodles, perfect for a comforting meal!
