Rice Noodles with Chicken, Mushrooms, Ginger, and Spinach

I started by boiling two whole chicken thighs in salted water, an essential step to achieve tender and flavorful meat. After the meat boiled, I let it cool slightly, then carefully deboned it, making sure to remove all bones and skin, keeping only the juicy thigh. This will be the base of our dish. In a pan, I added a little olive oil and heated it over medium heat. Then, I sliced fresh mushrooms thinly and added them to the pan. The aroma of sautéed mushrooms is a true delight, and I opted for champignon mushrooms, but you can experiment with any type of mushrooms you prefer. To intensify the flavor, I added a large clove of grated garlic and a piece of fresh ginger, about the size of my thumb, also grated. The garlic and ginger bring a note of freshness and a slightly spicy taste, perfect to complement the chicken. After the mushrooms softened and the garlic and ginger began to release their aromas, I added the deboned chicken thighs cut into cubes. To give the dish an Asian flavor, I added a tablespoon of soy sauce. I let everything cook for about 5 minutes, stirring occasionally. The next step was to add a good handful of fresh spinach. The spinach adds a pop of color and important nutritional value to our dish. I let the spinach wilt over heat for 5-8 minutes, until the leaves significantly reduced in size. Once all the ingredients were well combined, I mixed the composition with the rice noodles, which had been previously boiled. The rice noodles have a delicate texture and absorb the flavors of the dish, making them perfect for this recipe. To add a splash of moisture and flavor, I incorporated a tablespoon or two of the water in which the noodles were boiled. Finally, I grated a little cheese on top to give the dish a creamy and savory taste. I also sprinkled sesame seeds, which not only provide a crunchy contrast but also a beautiful aesthetic. If you want to intensify the flavors, a drizzle of chili oil can be added, and for those who prefer spicy dishes, chili seeds are an excellent choice.
