Golden potatoes with meat from the side dish

Potatoes are a versatile and beloved ingredient in Romanian cuisine, and this simple and delicious recipe is perfect for showcasing them. We start by peeling the potatoes, choosing the most beautiful specimens that are free from blemishes or defects. After peeling, we cut them into suitable pieces, neither too large nor too small, to ensure they cook evenly. It is important to wash them well under a stream of cold water to remove any impurities and starch, which will help achieve crispier potatoes. Once peeled and washed, we place them in a pot with cold water, adding a pinch of salt to enhance the flavor. We boil the potatoes only halfway, for about 7-8 minutes, until they become slightly soft but not enough to crush. This step is essential as it will help us achieve the perfect texture in the end. After boiling, we transfer them to a strainer, letting them drain for 5 minutes to ensure they retain their crispiness. Once drained, we sprinkle salt and freshly ground pepper on top to give them a savory taste. We arrange the potatoes in a tray in a single layer, ensuring each piece has enough space to brown nicely. We pour olive oil or melted lard over the potatoes, making sure to evenly coat each piece, then place the tray in the preheated oven at medium heat, letting them bake for 30-35 minutes. It is important to turn them halfway through the baking time to ensure they brown evenly. If we want a more golden and crispy crust, we can leave them in the oven a little longer, monitoring them closely. While the potatoes are baking, we take care of the meat. We remove the meat from the previously fried pot and place it in a saucepan over medium heat, allowing it to heat well until the lard starts to sizzle. This step will help intensify the flavors and make the meat even more delicious. Once well heated, we remove the meat with a spatula and place it on a paper towel to absorb the excess lard. For serving, we place the meat and sausages on a platter, alongside the crispy and browned potatoes, and we can accompany them with pickles or a fresh salad, which will add a note of freshness to the dish.
