Honey Tajine with Potatoes, Peppers, and Olives

To prepare a delicious and comforting meal, we will start by gathering all the necessary ingredients. We need about 800 grams of lamb or beef, which will provide a rich and savory flavor. We will also need a large onion, a carrot, a red bell pepper, a few cloves of garlic, 200 grams of green or black olives, olive oil, salt, pepper, sweet paprika, cumin, and of course, 500 ml of vegetable broth. Potatoes are essential, so we will use 4-5 medium potatoes, and for decoration, fresh parsley. We start by heating the oil in a pan or a tajine with a lid over medium heat. When the oil is well heated, we add the pieces of meat and brown them on all sides until they develop a nice golden crust. This will help seal in the juices of the meat, giving it an intense flavor. Once the meat is well browned, we remove it from the pan and set it aside. In the same pan, we add the finely chopped onion, sliced carrot, diced bell pepper, and crushed or sliced garlic. We sauté the vegetables for about 3 minutes until they become translucent and start to soften. These vegetables will add sweetness and flavor to our dish. After the vegetables are ready, we place the meat on top, add the olives, and sprinkle the spices: salt, pepper, paprika, and cumin, to enhance the flavors. We mix all the ingredients well and pour the vegetable broth over, making sure all the ingredients are covered. We let it come to a boil on the stovetop, so the flavors combine perfectly. Once we have a boil, we transfer the pan to the preheated oven at 200°C and let it bake for about 1 and a half hours. This step is crucial, as the even heat of the oven will help the meat become tender and juicy. After this time, we add the large diced potatoes to the pan. We gently mix to integrate them into the dish and let them cook together with the other ingredients for another 30-45 minutes, until the potatoes become soft and absorb the delicious flavors. Finally, we remove the pan from the oven, check the seasoning, and if necessary, adjust with a little salt and pepper. We serve the dish hot, garnished with chopped fresh parsley for an extra touch of color and freshness. This recipe will not only delight the taste buds but also create a warm and welcoming atmosphere around the table. Enjoy your meal!
