Green Salad with Pomegranate and Breaded Chicken Breast

To prepare a delicious and filling chicken breast salad, we start by ensuring that all the ingredients are fresh and of good quality. The first step is to take care of the chicken breast or schnitzels. These are sliced into thin pieces so that they are easy to cook and integrate perfectly into the salad. After cutting them, we set them aside to add later. While preparing the ingredients, we focus on the green salad. It is washed very carefully to remove any impurities. After washing, it is cleaned of any wilted or damaged parts and, if necessary, cut into smaller pieces that are easy to consume. The clean salad is placed in a large bowl, ready to receive the other ingredients. We continue with the vegetables: tomatoes are diced, and green onions or red onions are sliced thinly in a julienne style. Cucumbers are peeled, and radishes are washed and cut into thin slices. If you have olives on hand, they can add a touch of flavor and a delicious taste to the salad. Also, if you opt for it, the bell pepper is cut into strips or cubes, depending on your preference. All the ingredients are added to the green salad, creating a colorful and appetizing mix. Now, let's take care of the dressing. In a bowl, we put sour cream, kefir, salt, pepper, finely ground dried garlic, olive oil, and lemon juice. If you prefer a more intense taste, you can also add mustard, as well as very finely chopped garlic. We mix all the ingredients well to obtain a liquid, homogeneous, and tasty dressing. This will add a creamy and savory note to our salad. The obtained dressing is poured over the salad, and the ingredients are carefully mixed, ensuring that each leaf of salad and each vegetable is well coated with the sauce. The prepared salad is then placed in the refrigerator to cool and allow the flavors to blend perfectly. When serving, we take care of assembling the plate. On a bed of fresh salad, we carefully place the slices of fried or cooked chicken breast, and on top, we sprinkle pomegranate seeds, which not only add a special appearance but also a sweet-sour taste. It is important to mention that the sour cream dressing is heavier, so for those who want a healthier option, a yogurt-based dressing or a light vinaigrette can be chosen.
