Sautéed zucchini with chicken

Thinly sliced zucchini softens quickly, and sautéed zucchini with chicken brings together tender vegetables and browned pieces of chicken. The garlic goes in at two different times, and I eat it with polenta, like a stew with less sauce, where the zucchini and carrot are still visible among the pieces of chicken. Prep: 20 minutes. Cook: 48 minutes. Total time: 68 minutes. Servings: 4. Approximately 570 kcal and 36 g protein per serving.
Ingredients
- 700 g boneless chicken thighs
- 15 ml oil
- 50 ml oil
- 3 medium onions (450 g)
- 1 red bell pepper (180 g)
- 1 large carrot (150 g)
- 3 spring onions (45 g)
- 1 head of garlic (40 g)
- 2 medium zucchini (600 g)
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon sweet paprika
- 15 g fresh parsley
- 15 g dill
Preparation
1. Pat the chicken thighs dry with paper towels and cut them into cubes about 3 cm across. Heat 15 ml of oil in a frying pan and cook the chicken for 12 minutes, turning it, until browned and cooked through. Transfer it to a plate. 2. Heat 50 ml of oil in a large pan. Add the onion and bell pepper cut into julienne strips, the carrot and spring onions cut into rounds, then 2 finely chopped garlic cloves. Cook for 12 minutes, stirring now and then, until the vegetables soften. 3. Cut the zucchini into thin rounds and add them to the vegetables. Add 1 teaspoon of salt, 1/2 teaspoon of ground pepper and 1 teaspoon of sweet paprika. Cover the pan and cook for 22 minutes, stirring now and then, until the zucchini softens. 4. Return the browned chicken to the pan and add the remaining garlic, pressed. Cook for 2 more minutes, until everything is heated through, then sprinkle with the chopped parsley and dill.
Notes
Small, firm zucchini have fewer seeds, and their rounds soften faster than ones cut from a large zucchini. With very large ones, scoop out the seedy center before slicing, as it can release more liquid. If there is too much liquid from the vegetables at the end, leave the pan uncovered for another 5 minutes. You can leave out the dill and use another 15 g of finely chopped parsley instead. Serve with fresh bread, too, for dipping in the juices left in the pan. Store leftovers in a sealed container in the fridge for up to 3 days.
Frequently asked questions
Can I use chicken breast instead of thighs?
Yes. Cut the breast into 2 cm cubes and cook it for about 10 minutes, until cooked through.
Why did the zucchini rounds get too soft?
They may have been sliced too thinly or cooked for too long. Start checking the texture after 18 minutes of cooking with the lid on.
Can I use yellow zucchini?
Yes, you can use the same amount of yellow zucchini in place of green zucchini; cut it into rounds about 5 mm thick.
