Chicken ostropel in a multicooker

Chicken ostropel in a multicooker, a Romanian chicken stew, is browned before simmering for 40 minutes with tomatoes and garlic. The sauce turns red and thick, and the thighs and wings cook together. I choose thighs of a similar size so they brown evenly in the same batch. Prep: 20 minutes. Cook: 62 minutes. Total time: 82 minutes. Servings: 4. Approximately 450 kcal and 31 g protein per serving.
Ingredients
- 700 g bone-in chicken thighs
- 300 g chicken wings
- 1 tablespoon oil
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons oil
- 1 medium onion (150 g)
- 1 medium red pepper (150 g)
- 300 ml water
- 100 ml wine
- 3 ripe tomatoes
- 1 tablespoon tomato paste
- 1/4 teaspoon ground red pepper
- 1 g starch
- 1 head of garlic
Preparation
1. Cut the thighs in half and lightly score the surface. Pat the meat dry with paper towels, then season it with 1/2 teaspoon salt and 1/4 teaspoon black pepper. 2. Pour 1 tablespoon oil into the multicooker pot. Set the FRY program for 15 minutes and brown the thighs with the lid open, turning them on all sides. Transfer them to a plate, then brown the wings on both sides during the remaining time. 3. Take out the wings and add 2 tablespoons oil, the chopped onion and pepper to the same pot. Set FRY for 7 minutes; the vegetables will soften and take on a little color. 4. Add the thighs, wings and 300 ml water. Set STEW for 40 minutes and let the meat cook until it comes easily away from the bone. 5. 10 minutes before the program ends, add the wine, puréed tomatoes, 1 tablespoon tomato paste, 1/2 teaspoon salt, 1/4 teaspoon black pepper and 1/4 teaspoon red pepper. For a thicker sauce, stir 1 g starch into the tomato paste before adding it to the pot. 6. In the final minute, add the crushed garlic. When done, unplug the multicooker and serve the ostropel warm.
Notes
Bone-in thighs of a similar size brown more evenly; very large ones may need more time at the browning stage. Small wings color quickly, so keep an eye on them during the FRY program. If the puréed tomatoes are very watery, the sauce will stay thinner, and the optional starch can help thicken it. The wine goes into the sauce before the end of the cooking time; for an alcohol-free version, use 100 ml water with 1 teaspoon wine vinegar. You can increase the quantity for more people, but brown the meat in batches so it fits in the pot. Keep leftovers in the refrigerator for up to 3 days. If you’re serving several courses, start the multicooker about an hour and a half before serving. Serve the ostropel with polenta or bread to mop up the sauce.
Frequently asked questions
Can I use chicken breast instead of thighs?
Yes. Cut 600 g chicken breast into large pieces and cook it on STEW for 18 minutes, then check that it’s cooked through.
What should I do if the sauce is too thin?
Set the FRY program for another 5 minutes and leave the lid open until the sauce reduces.
Can I use canned tomatoes?
Yes, replace the 3 tomatoes with 300 g canned puréed tomatoes.
Can I use thighs only, without wings?
Yes, keep 1 kg bone-in thighs and brown them in batches; the STEW cooking time stays 40 minutes.
