How to Clean Leeks

To prepare a delicious dish with scallions, the first step is to gather the necessary ingredients and ensure that we have a clean and organized workspace. We start by putting water in a generous pot, large enough to allow the scallions to boil evenly. We place the pot over medium heat and wait for it to reach boiling point. It is important to ensure that the water is well salted, as this step will enhance the flavor of the scallions. In the meantime, we take care of the scallions. With a sharp knife, we cut off the root end of the bulb, being careful not to remove too much, so as not to compromise the texture and flavor. Once done, we transfer the scallions to the pot of boiling water. We let them boil for 2-3 minutes, just enough to soften the bulbs slightly and intensify their flavor. This blanching process helps to remove any bitter taste, leaving behind a sweeter and more pleasant scallion. After the scallions have boiled, we use a slotted spoon to remove them from the water and transfer them to a colander. We let them drain well, and then place them in a bowl of cold water. After a few moments, we take them out of the water and start peeling off the outer skin, which consists of brown layers.
