Coconut milk and strawberry smoothie

Beverages - Coconut milk and strawberry smoothie by Florina E. - Recipia

The coconut milk and strawberry smoothie uses coconut milk without heating it, which gives it a creamy texture without any cooking. It blends until smooth, and honey is optional if you like it sweeter. I like to drink it straight away, in a small glass, while the texture is still uniform. Preparation: 5 minutes. Cooking: 0 minutes. Total time: 5 minutes. Servings: 1. Approximately 460 kcal and 5 g of protein per serving.

Ingredients

  • 150 g strawberries
  • 200 ml coconut milk
  • 7 g honey (optional)

Preparation

1. Wash the strawberries, remove the stems and put them in a food processor. 2. Pour in the coconut milk and, if you want a sweeter taste, add the honey. Blend for 1 minute, until you have a smooth paste.

Notes

To keep it vegan, leave out the honey; half a very ripe banana can stand in for it. You can serve it with a bowl of oats. It’s best fresh, but you can keep it covered in the fridge for up to a day and shake it before drinking. Choose ripe strawberries that are red all the way to the stem; paler ones can make the drink more tart. If the berries are large, cut them in half before blending. The fat in canned coconut milk can collect on top, so stir it until smooth before measuring.
