Appetizers - Zucchini and Chorizo Socca by Speranta B. - Recipia
To create a delicious and flavorful recipe, we start by carefully preparing the ingredients. We begin by sautéing the onion in butter, a process that will take about 15-20 minutes. It is essential for the onion to become golden and caramelized, as this step adds natural sweetness to the final dish. While the onion is sautéing, we can take care of the chorizo or chosen sausages, which we will fry until they become crispy and aromatic. Choose a variety of chorizo that you like, and its flavor will enhance the dish.

Next, let's prepare for baking. We place a heat-resistant dish, whether rectangular or oval, in the preheated oven at 200 degrees Celsius (gas 6). This step is important to ensure even baking of the dough. In a deep bowl, using a whisk, we mix the flour with salt and pepper, adding a hint of flavor from the very beginning. Garlic, an essential ingredient, will be added in water along with two tablespoons of extra virgin olive oil. The resulting mixture will be poured over the dry ingredients, forming a thin batter, similar to that of pancakes.

Carefully remove the heat-resistant dish from the preheated oven, taking care to protect our hands. We add two tablespoons of olive oil to the dish, tilting it slightly to evenly coat the bottom. Now, we pour the batter into the dish, being careful not to mix it. On top, we evenly arrange the caramelized onion, slices of zucchini, and chorizo, sprinkling pepper to taste for an extra flavor boost.

The dish goes back into the oven, where it will stay for 15 to 18 minutes. It is important to ensure that the dough becomes golden and well-baked. Once the time has expired, we take the dish out of the oven and generously sprinkle grated parmesan on top. We let the dish sit for 7-8 minutes to cool slightly, allowing the flavors to blend perfectly.

Before serving, we add a few fresh parsley leaves for a splash of color and freshness. Optionally, we squeeze a little fresh lemon juice on top, which will balance the rich flavors and add a note of acidity. This dish is perfect to be served as an appetizer or main course, and the combination of ingredients will surely impress anyone who tastes it. Even if you decide to replace the parmesan with another cheese of your choice, make sure to add it at the end to preserve the texture and flavor. Enjoy your meal!
