A spinach quiche is a savory dish, perfect for a brunch with friends or a quick family dinner. This simple recipe is versatile and can be customized according to your preferences. Here’s how to achieve a perfect quiche with a crispy crust and creamy filling.

Ingredients for the dough:
- 250 g flour
- 125 g cold butter, cut into cubes
- 1 egg
- 1 pinch of salt
- Cold water (as needed)

Ingredients for the filling:
- 300 g fresh spinach (or 200 g frozen spinach)
- 3 eggs
- 200 ml cooking cream
- 100 g feta cheese or cottage cheese
- Salt and pepper to taste
- 1 small onion (optional)
- Olive oil (for sautéing the onion)

Step 1: Preparing the dough
In a large bowl, combine the flour with the salt. Add the cold butter and, using your fingertips, work it into the flour until you achieve a texture similar to fine sand. Add the egg and incorporate it. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Form a ball, wrap it in plastic wrap, and refrigerate for 30 minutes. This step is essential for achieving a flaky crust.

Step 2: Preparing the spinach
Wash the spinach well under cold running water, then blanch it in a pot of boiling water for 2-3 minutes. Drain it and cool it quickly under cold water to preserve its vibrant color. If using frozen spinach, ensure it is well thawed and drained.

Step 3: Preparing the filling
If you want to add onion, sauté it in a pan with a little olive oil until it becomes translucent. In a bowl, beat the eggs together with the cream, then add the drained spinach, crumbled feta cheese, salt, and pepper. Mix all the ingredients until you achieve a homogeneous composition.

Step 4: Assembling the quiche
Preheat the oven to 180°C. Remove the dough from the refrigerator and roll it out on a floured surface until you achieve a sheet about 3 mm thick. Place the dough sheet in a 24 cm tart pan, ensuring that the edges are well covered. Prick the dough with a fork to prevent it from puffing up.

Step 5: Baking
Pour the spinach filling over the prepared dough. Bake the quiche in the preheated oven for 30-40 minutes, or until the filling is firm and the surface turns golden.

Step 6: Serving
Let the quiche cool for a few minutes before slicing it. Serve it warm or at room temperature, alongside a fresh seasonal salad. You can also add a few slices of tomatoes or avocado for an extra freshness.

Variation suggestion: You can experiment with other vegetables, such as mushrooms or peppers, or you can replace the feta cheese with mozzarella for a creamier texture. Additionally, you can add spices like nutmeg or dill for a more complex flavor.

This spinach quiche recipe is not only a quick dish but also a healthy option, packed with vitamins. Enjoy it with your loved ones and cherish the moments spent together!
