To prepare a delicious recipe for spinach and cheese muffins, we start by allowing the puff pastry to thaw naturally, being careful not to let it get too soft, as we want it to retain its texture. While the pastry is thawing, we take care of the filling. We take the frozen spinach rounds and chop them finely, then put them in a pan with a piece of butter over medium heat. It is important to stir constantly to prevent the spinach from sticking to the pan. We let the spinach cook until the liquid has completely evaporated and the spinach becomes more concentrated in flavor. This step is essential to avoid a wet filling for the muffins.

Meanwhile, in a large bowl, we whisk the eggs until they become homogeneous. We add the telemea cheese, which will provide a salty note and a creamy texture, and the grated Edamer cheese, which will add a rich flavor and an appetizing appearance. We mix all the ingredients well and finally incorporate the sautéed spinach, ensuring it is evenly distributed in the mixture.

Once the pastry has completely thawed, we prepare to cut it. Using a sharp knife, we cut squares from the puff pastry, being careful to make them the right size for the muffin tins. We place each piece of pastry in the muffin tin molds, making sure it fits well on the bottom and sides.
