To prepare a delicious salad, the beginning is essential. Start by peeling the carrots, celery, and potatoes, making sure to remove the skin and any unpleasant parts. Once you have finished peeling the vegetables, place them in a large pot of water to boil, adding a teaspoon of salt to enhance the flavor. It is important to let them boil until they become tender, but not so much that they fall apart. Usually, carrots and potatoes boil for about 20-25 minutes, while celery may take a little longer, depending on the size of the pieces.

Meanwhile, take another pot and boil the peas separately. This will add a sweet note and a pleasant texture to your salad. After all the vegetables are boiled, drain them well and let them cool. Once they have cooled, chop them into uniform cubes so that they integrate perfectly into the salad.

Cucumbers and bell peppers should be finely chopped and left in a colander to drain excess liquid. This step is crucial to avoid the salad becoming watery. Once all the ingredients are prepared, combine the boiled, drained, and chopped vegetables in a large bowl.

While the blender is running, gradually add the oil, alternating with lemon juice, until you achieve a creamy and smooth consistency.
