Preparation time: 1 hour
Baking time: 1 hour
Total time: 2 hours
Servings: 8

Ingredients:
- 500 g chicken liver
- 580 g pork liver
- 550 g pork ribs
- 200 g fresh Plescoi sausages
- 165 g green garlic
- 210 g green onions
- 110 g ramsons
- 50 g parsley
- 120 g dill
- 100 ml oil
- salt and pepper to taste
- 6 raw eggs
- 7 boiled eggs
- 275 g puff pastry

Step by step:

1. Boiling the liver: Start by boiling the pork and chicken liver in a large pot of water. Make sure the water is enough to completely cover the liver. Boil over medium heat for about 20-25 minutes, until the liver is well cooked. After boiling, remove the liver from the water and let it cool slightly.

2. Preparing the ingredients: While the liver cools, clean and finely chop the onion, garlic, and ramsons. Wash the parsley and dill well and chop them finely. These greens will add a fresh and aromatic taste to your meatloaf.

3. Preparing the sausages: Cut the Plescoi sausages into small pieces and fry them in a pan with a little oil until they change color and become slightly crispy. They will give the meatloaf a special flavor.

4. Sautéing the vegetables: In a pot (or a deeper pan), add 100 ml of oil and heat it over medium heat. Add the onion, garlic, and ramsons and sauté for about 5-6 minutes until they become translucent and aromatic. Finally, add the parsley and dill, mixing well.

5. Combining the ingredients: Cut the boiled liver into small cubes and mix it in a large bowl with the fried sausages and sautéed vegetables. Add salt and pepper to taste. Beat the 6 raw eggs and incorporate them into the mixture.

6. Preparing the pork ribs: Cut the pork ribs to fit into an 18 cm diameter cake pan. Wash them and dry them well with a paper towel, then salt and pepper them. Lightly fry them on both sides until they turn golden.

7. Assembling the meatloaf: Line the cake pan with parchment paper. Use a disc of puff pastry with the diameter of the pan to cover the base. Place the pork ribs around the edge of the pan, then add the meatloaf filling. Carefully place the 5 boiled eggs in the center and fill the rest of the pan with the meatloaf mixture.

8. Creating the lattice: With the remaining puff pastry, you can create a lattice on top of the meatloaf, adding an elegant and aesthetic detail to your dish.

9. Baking: Bake the meatloaf in a preheated oven at 180°C for 45 minutes. To prevent the top pastry from burning, place a piece of parchment paper over it. Once the meatloaf is nicely browned, remove it from the oven and let it cool slightly.

10. Finishing: Bake the silicone molds filled with the meatloaf mixture for 25 minutes, then remove them and place them on a platter.

The pork ribs meatloaf is served warm or at room temperature, sliced. It is delicious alongside a fresh green salad or assorted pickles that balance the rich taste of the meat. You can accompany this dish with a glass of white wine or plum brandy for a complete culinary experience.
