Appetizers - Mashed beans, oriental (Byesar) by Ruxanda P. - Recipia
To prepare a delicious roasted garlic bean dip, it is essential to follow a few simple yet crucial steps that will transform the basic ingredients into a savory dish, perfect to be served as an appetizer or side.

We start by roasting the garlic. Preheat the oven to 180 degrees Celsius. Wrap the head of garlic in aluminum foil and roast it for about 30 minutes, until it becomes soft and sweet. The flavors will intensify, and the roasted garlic will add an unmatched depth to the dish.

The night before cooking, let the beans soak in cold water overnight. This step will not only reduce the cooking time but also help achieve a finer texture. The next day, drain the beans and put them to boil in a pot with water and salt. The boiling time will vary depending on the quality of the beans, but generally, it should take between 45 minutes and 1 hour. When the beans are cooked, drain the water but keep it in a bowl for later use.

To achieve a perfect dip, pass the beans through a sieve, so only the beans remain, discarding the skins. Place the beans in a blender, adding olive oil, cumin, paprika, cayenne pepper, lemon juice, salt, pepper, and the roasted garlic. Gradually add the reserved cooking water, adjusting the consistency to achieve a smooth and creamy dip.

While the dip is blending, finely chop the red onion and coriander. These ingredients will add a crunchy and fresh contrast to the dish. Once the dip is ready, serve it in a bowl, sprinkling the red onion and coriander on top. Garnish with a little paprika, a drizzle of olive oil, and a few fresh mint leaves for an extra burst of flavor.

To complete the culinary experience, toast some slices of bread or prepare pita, which will be perfect for enjoying this delicious bean dip. This recipe is not only easy to make but also full of flavors and textures that will blend perfectly, adding a touch of savor to your meal. Enjoy!
