Cornulețe surpriză, Romanian ham and cheese pastries

Appetizers - Cornulețe surpriză, Romanian ham and cheese pastries by Olivia N. - Recipia

The twisted ends, tucked one under the other, give these Cornulețe surpriză their shape. The dough, made with milk, oil and butter, bakes up golden, while the onion and mushrooms stay tucked inside. I start with the twisted end while the rolls are still a little warm. Prep time: 35 minutes. Cook time: 20 minutes. Rest time: 75 minutes. Total time: 130 minutes. Servings: 8. Ingredients

  • 1 kg flour
  • 400 ml warm milk
  • 25 g fresh yeast
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 200 ml oil
  • 50 g soft butter
  • 100 g ham
  • 100 g cheese
  • 1 medium onion (150 g)
  • 150 g mushrooms
  • 1 egg

Preparation

1. Dissolve the yeast and sugar in 100 ml warm milk. Add 2 tablespoons of flour and 1 teaspoon of salt, then leave the starter for 15 minutes, until foamy. 2. Put the remaining flour, remaining milk, oil, soft butter and 2 teaspoons of salt in a bowl. Add the starter and knead for 10 minutes, until you have a smooth dough. Cover and leave to rise for 60 minutes, until doubled in size. 3. Cut the ham, onion and mushrooms into thin strips, then grate the cheese. 4. Divide the dough into four pieces and roll each one out into a thin sheet, about 3 mm thick. Cut into squares about 8 cm across, then cut each square diagonally to make triangles. 5. Put some filling on each triangle and roll it up. Bring the ends together, twist them and tuck one under the other. Arrange the pastries on baking paper-lined trays and brush with the beaten egg. 6. Bake in a preheated oven at 180°C for 20 minutes, until golden.

Notes

With a tomato and cucumber salad on the side, the pastries make a filling snack. Keep them in a sealed container in the fridge for up to 3 days. You can replace the cheese with the same amount of well-drained, grated pizza mozzarella. The dough contains gluten and dairy, and egg is used for brushing. I work out the rising time before choosing when to serve them, since the dough needs time. If you wash the mushrooms, pat them dry well before cutting so they don't add water to the filling. Cut the onion as finely as you can, since thick strips stay firmer after baking. Ham that's too wet can soften the dough around the filling, so pat it dry before using it too.

Frequently asked questions

Can I use dry yeast instead of fresh yeast?

Yes, use 8 g instant dry yeast and mix it directly into the flour.

What should I do if the filling comes out through the seam?

Leave about 1 cm of plain dough around the edges and press the seam together firmly before twisting the ends.

How thin should I roll out the dough?

About 3 mm is thin enough for triangles that roll up without tearing.

Can I use another kind of ham?

Yes, you can use 100 g smoked ham, cut into thin strips.
