To prepare a delicious bean salad, it is essential to follow a few simple yet crucial steps to achieve a tasty and aromatic dish. We begin by preparing the beans. If you are using dry beans, place them in a strainer and rinse them well under cold running water. It is advisable to soak the beans in cold water overnight, which will facilitate their cooking. The next day, rinse the beans again and boil them in two waters. This step helps eliminate substances that can cause digestive discomfort. Once the beans are cooked, leave them on the stove until the beans become tender and well-cooked. If you are using frozen beans, make sure they are completely thawed and well-drained.

While the beans are cooking, you can start preparing the vegetables that will complete the salad. Peel an onion; ideally, you should use red onion for a sweeter taste and vibrant color, then chop it finely. Add the chopped onion over the boiled beans. The next step is to prepare the garlic. Chop a few cloves of garlic finely. These will add extra flavor to your salad. Prepare a dressing from garlic, adding vinegar, lemon juice, salt, and pepper. Personally, I also added a tablespoon of balsamic vinegar, but for a more balanced taste, it’s better to stick to regular vinegar.

After making the dressing, pour it over the beans and onion, gently mixing to ensure that each bean is coated with the delicious flavors. Let the salad marinate for about an hour, so all the ingredients blend perfectly. In the meantime, prepare the tomatoes. Wash them well, then slice them thinly. Arrange the tomato slices on each plate, creating a vibrant color base.

Then add a handful of fresh salad on top of the tomatoes, followed by your favorite olives, which will bring a salty and savory note. Finally, garnish each plate with basil leaves. Even if you used frozen leaves, they will provide a touch of freshness and flavor. And so, your bean salad is ready to be served. It is a healthy dish, rich in proteins and vitamins, perfect for a light meal or as a side dish for a barbecue. Enjoy every bite and savor the combination of flavors!

2 cans (400g each) of white beans, 2 medium onions, 1 clove of garlic, 4 tablespoons of vinegar, 2 tablespoons of lemon juice, salt, pepper, 4 tablespoons of olive oil, 8 small tomatoes, 150 g of black olives, basil for garnish.
