Pork and potato ciorbă (Romanian sour soup)

Soups - Pork and potato ciorbă (Romanian sour soup) by Natasa C. - Recipia

Pork and potato ciorbă (Romanian sour soup) simmers with pork leg, smoked pork ribs and root vegetables, then gets finished with sour cream and egg yolks. The potatoes and vinegar give the broth body and a gentle tang, and I cut the potatoes into cubes about 2 cm across so you get a good bite of them in every spoonful. Prep: 25 minutes. Cook: 113 minutes. Rest: 15 minutes. Total: 153 minutes. Serves: 6. About 650 kcal and 38 g protein per serving.

Ingredients

  • 3500 ml water
  • 800 g pork leg
  • 350 g smoked pork ribs
  • 300 g celeriac
  • 2 medium onions (300 g)
  • 4 medium carrots (400 g)
  • 75 ml oil
  • 1/2 hot pepper (10 g)
  • 5-6 medium potatoes (750-900 g)
  • 2 egg yolks
  • 3 tablespoons sour cream (20% fat)
  • 3 tablespoons vinegar (45 ml)
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 15 g lovage

Preparation

1. Take the sour cream out of the fridge 15 minutes before using it. Pour the water into a large pot and bring it to a boil in about 15 minutes. 2. Add the pork leg, cut into cubes about 3 cm across, and the smoked pork ribs. Boil for 5 minutes, skimming off the foam as it forms. 3. Peel the celeriac, add it to the pot with one whole onion and simmer over low heat for 60 minutes, until the meat is tender. 4. Cut 3 carrots into cubes and add them to the soup. Boil for 5 minutes. 5. Finely chop the other onion, grate the remaining carrot and chop the hot pepper. Heat the oil in a pan and cook the vegetables over low heat for 5 minutes, until softened. 6. Take the celeriac and whole onion out of the pot, then add the cooked vegetables. Let the soup bubble gently for 3 minutes. 7. Peel the potatoes, cut them into bite-sized cubes and add them to the pot. Boil for 20 minutes, until the potatoes are thoroughly cooked. 8. Mix the egg yolks with the sour cream. Gradually stir in 3 ladles of hot soup, then turn off the heat and pour the mixture into the pot. Season with vinegar, salt and pepper, then add the chopped lovage.

Notes

I serve it with red onion at the table. The smoked ribs can be quite salty, so taste the broth before adding salt and add as much as needed at the end. Large pieces of pork leg may need another 10-15 minutes of cooking. Older potatoes can fall apart if they cook much longer than the stated time. For a milder smoky flavor, you can replace the smoked ribs with 350 g smoked pork ribs. The soup keeps in the fridge for up to 3 days; warm it slowly, without letting it boil hard, because it contains sour cream and egg. Sour cream contains dairy, and egg yolks contain eggs.

Frequently asked questions

What can I use instead of lovage?

Use 10 g chopped parsley instead of the 15 g lovage; the flavor will be different, but the soup will still be aromatic.

Why has the broth turned cloudy?

Boiling it too vigorously can make it cloudy. Once you have skimmed off the foam, keep the soup at about 90-95°C, with just a few small bubbles.

Can I use new potatoes?

Yes, especially if they are small and have thin skins. Start checking them after 12 minutes, since they may soften faster than mature potatoes.

What should I do if I added too much vinegar?

Add 100 ml hot water and taste again; if needed, adjust the salt and pepper afterwards.
