The first time I made Flower-Power with peaches was on a scorching day when I was looking for something to do with the leftover puff pastry in the freezer and some canned peaches that were sitting in the fridge. This recipe doesn't require special skills, just a little patience to cut and arrange the pastry in layers. You don't need many ingredients or complicated techniques, but it's the kind of dessert that grabs attention when you put it on the table. Take the puff pastry out of the freezer and let it sit at room temperature until it softens enough to work with it without breaking. Meanwhile, preheat the oven and let it warm up well. 2. Place a baking paper in the tray and prepare your cutters (three in total, of progressive sizes: 10 cm, 8 cm, and 6 cm in diameter). If you don't have cookie cutters, a glass or something similar will work, as long as it respects the size difference between the circles. 3. Using the largest cutter (10 cm), cut a circle from the pastry. Take a sharp knife and score it from the edge to the center to create 6 "petals." Don’t cut all the way through; leave the center intact so it doesn’t fall apart. 4. Gently turn each petal outward so they stand slightly raised, like a blooming flower. Place the shaped circle directly in the tray. 5. Cut the second circle (8 cm) and score it into 6 petals as well. Place it over the first one, making sure the petals alternate and don’t overlap. 6. Cut the third circle, the smallest (6 cm), without scoring it. Place it in the center of the "flower." 7. Place half a peach, cut side down, right in the center of the flower, over the small circle of pastry. 8. Repeat the steps with the remaining pastry and peaches until the tray is full or you run out of ingredients. 9. Put the tray in the preheated oven at medium heat. Bake for about 25 minutes until the pastry turns golden brown and the petals are golden at the edges. 10. Remove the tray and, while still hot, brush the peaches with a little honey (use a brush). If you like, dust the petals with powdered sugar. Why I make this recipe often I love making it because I don’t have to plan much. It’s quick, doesn’t dirty many dishes, and you only need a few ingredients. Canned peaches are easy to find year-round, and I always keep puff pastry in the freezer. It’s a dessert that looks good without wasting time on elaborate decorations. Tips and variations Tips The pastry is easiest to work with if it’s not completely thawed but not too hard either. You can use anything you have on hand: glasses, mugs, jar lids – the important thing is that they increase in size and the smallest one should be about the size of the base of a peach half. Can I use fresh peaches? Yes, but they need to be well-ripened and peeled. From experience, canned peaches are softer and don’t dry out the pastry. Can I use a different pastry than puff pastry? I don’t recommend it because the texture is important – puff pastry rises and separates, which helps achieve the flower look. Can they be prepared in advance? The pastry can be cut and assembled, then kept in the fridge for a few hours covered, but it’s best to bake them right before serving. Freshly baked, puff pastry is much better. Preparation

Necessary utensils and accessories: - 3 circle-shaped cutters - baking paper - a large tray - a sharp cutter/knife Note: the sizes of the cutters depend on the size of the peaches. The smallest should be able to fit half a peach (mine was 6 cm in diameter). The second is 2 cm larger than the first (mine was 8 cm), and the third is 2 cm larger than the second (mine was 10 cm). Let the dough thaw as it pleases at room temperature. Prepare the tray and line it with baking paper. Preheat the oven well. Take the largest cutter, cut out a circle, which you then cut into 6 parts (as in picture 1A) and spread them out like petals (picture 1B). Place it in the tray. With the second cutter, cut out the second circle, which you also cut into 6 petals (as in picture 2) and place it over the first one in the tray, ensuring the petals do not overlap (picture 3). With the smallest cutter, cut out a circle that you place in the center of the flower in the tray, and on top of it, place half a peach (picture 4). Repeat the same with the remaining dough and peaches. Place the tray in the preheated oven and let it bake at medium heat until the flower petals turn golden (about 25 minutes). After removing the tray from the oven, I brushed the peaches with honey to give them a slight shine and dusted the petals with sugar. That's it :)
