Turkey Breast with Almonds

In a heated pan, we add 60 ml of the total amount of oil, preparing to fry the pieces of meat. The oil should be well heated but not smoking, to avoid burning. We carefully place the pieces of meat in the pan, making sure not to overcrowd them so they fry evenly. We fry the meat until it turns golden on each side, which usually takes a few minutes. It is important to turn the pieces with a spatula to avoid damaging the crispy crust. Once the meat is cooked, we remove it from the pan and drain the remaining oil, leaving just a little for the next step. We reintroduce the fried meat into the pan, preparing to add an extra layer of flavor. In a separate pan, we lightly fry the chopped almonds in the remaining oil, 40 ml, to enhance their aroma. This step must be done quickly, as the almonds can burn easily. After the almonds have taken on a golden hue, we add them over the turkey meat in the pan. Now it's time to add the soy sauce, which will bring a deep umami flavor to the dish. We sprinkle a pinch of salt and mix everything well, frying on high heat for a few minutes to allow the flavors to combine and achieve a perfect texture. The turkey breast with almonds is now ready to be served. It is ideal to accompany it with a side of rice or sautéed vegetables, which will complement this savory dish. A seasonal salad with fresh vegetables will bring a touch of freshness and balance the rich flavor of the meat.
